Texas Chili and Bucks

So, I decided to make chili since it has been so cold. Mark and I went to the grocery store on Saturday to buy groceries and I looked for a 2-Alarm Chili kit. Ha ha ha ha ha ha ha ha. (These people don' t have any idea what that is. So, we decided that we would have to do it from scratch. Ok, so I went to get chili meat. Ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha. Sorry. They didn't have chili meat, but they had "Pasty" meat which is exactly like Chili meat. So I got that and hamburger. Ok, so, we were going through our heads trying to think what was in the chili kit. Chili powder, cayene pepper, garlic/onion, cumin, salt, paprika and masa. I had it all but masa. Went to look in the Mexican food (Or what they call "Gourmet" aisle) and they had no idea what it was. Ok, cornstarch wil do. Fritos and cheese was the finishing touches.

Ok, so I started on Monday and browned the meats and drained it. Then I added 4 T of chili powder, 1 T of the rest of the spices. Plus garlic powder and onion powder. (Next time I will use minced garlic and onion.) 1 can of chopped tomatoes and 1 can of tomato paste. Then I added 3 1/2 cans of water. I let it simmer for about an hour and tasted. I decided it needed a little more of this and that. I went through this most of the day. The finished product was excellent!! Come to find out I didn't need the masa anyway. So, when Mark got home I had the chili ready. I do believe it is the best that I have ever cooked. I will never buy a kit again!

While we were sitting at the table eating, Mark said "Look at the big deer!!!" I looked and this huge buck was walking in front of the condo. (The windows are really big) so Mark grabbed the camera to take pictures but when he took it the flash was on and the deer ran. It was beautiful though. Hunter's dream.

I guess that's all. Tonight I am going to work really hard. We are having sloppy joes!!! We have to go to church tonight and that is quick.

Thanks Marcy! We are really loving it, especially when our son in college in Texas says he is jealous because we are so cool up here and it is 85-95 there. He will be here at Christmas though. I can't wait to see him.
